Avocado,Papaya and Red pepper salad
7 oz mixed greens
2 -3 scallions, chopped
3 - 4 TBSP Cilantro (freshly chopped)
1 small Papaya
2 Red Bell Peppers
1 TBSP Lime juice'
3 - 4 TBSP Pumpkin Seeds, preferably Toasted
Juice of 1 Lime
Large Pinch of Paprika
Large Pinch of ground Cumin
Large Pinch of Sugar
1 Garlic clove, minced
4 TBSP Fruity Extra Virgin Olive Oil from Olive Oil Etcetera
Optional Dash of White wine Vinegar
Salt and Pepper to taste
A optional drizzle of Jalapeno Garlic Olive Oil
Combine salad greens, cilantro and scallions.
Cut the papaya into and red peppers into slices and add to the salad greens.
Whisk together the dressing ingredients. Toss the greens with the dressing and sprinkle with Toasted Pumpkin seeds.
