We doubled the vegetables for this recipe.
2 Tablespoons Roasted Garlic Olive Oil from Olive Oil Etcetera
4 Garlic cloves, chopped
1/2 Red onion
1/2 White onion
1/2 Bell pepper
1 Celery stick, chopped
Pinch of curry
2 packages of medium firm tofu, drained
Preheat grill to medium. Heat up a pan over the grill and add roasted garlic olive oil. Add the garlic and vegetables to the pan. Add the salt and a pinch of curry. Add the chopped tofu to the pan and cook 12 minutes. Add the bbq sauce, cover and simmer for 15 minutes. Serve hot.
