Caesar Salad
Ingredients:
Head of Romaine lettuce- torn into bite size pieces
3/4 cup Extra Virgin Olive Oil (Arbequina, Fruity, Koroneiki or Frantoio) from Olive Oil Etcetera
3 Tablespoons good quality red wine vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon sea salt
1/4 teaspoon dry mustard
1 clove garlic, crushed
Directions:
Whisk Extra-Virgin Olive Oil, red wine vinegar, Worcestershire Sauce, Salt, dry mustard and garlic. Mix well. Place cleaned and cut lettuce in a large bowl.
You can add the following ingredients to your dressing or add directly to the cleaned and torn Romaine
Parmesan cheese to taste
Anchovies if desired
Fresh pepper to taste
The juice of 1/2 fresh lemon
Croutons
