Caramelized Onion and Smoked Cheese Squares
Ingredients:
2 medium onions, thinly sliced
1 Tablespoon Butter
1 Tablespoon Arbequina Extra Virgin Olive Oil from Olive Oil Etcetera
1 Tablespoon Brown Sugar
1 Tablespoon Traditional (18 -Year) Balsamic Vinegar from Olive Oil Etcetera
1/4 cup Slivered Almonds
1/4 cup Dates
1/2 cup shredded Mozzarella
1/2 cup shredded Gouda Cheese
1/2 cup shredded Smoked Cheddar
1 pizza crust, baked or store-bought Boboli Crust
Directions:
Preheat oven to 450 degrees. In skillet, cook the onion in butter and Extra-Virgin Olive Oil over medium heat for 10 minutes, stirring occasionally. Stir in sugar, balsamic vinegar and dates. Cook and stir an additional 5 minutes, until heated through and the onions are golden brown. Remove from heat. Stir in almonds. Sprinkle the cheeses over the pizza/bread crust. Top with onion mixture. Place the pizza/bread crust on an ungreased baking sheet. Bake 8 minutes until the cheese is melted. Let stand 5 minutes then cut into squares.
