Chickpea Not Tuna Salad
1 28 oz can of chickpeas drained and rinsed
1 lemon and rind
Mayonnaise, optional to use Vegan
Salt, pepper, granulated garlic powder
1 red onion, finely chopped
1 - 3 stalks of celery, finely chopped
1 Tablespoon Chia seeds just for the health benefits
If using canned beans, heat or steam them in a pot to soften them for a few minutes before mashing them.
Mash them with a fork or use a food processor and combine all of the other ingredients.
Enjoy with crackers, green salad, make a sandwich or eat it as a dip. You can also substitute the mayo with oil and make it a whole other creation, more like hummus.
