1 lb chicken- split and cut into bite size pieces
Seasoned bread crumbs
3 – 4 eggs (lightly beaten)
Rosemary Olive Oil from Olive Oil Etcetera to drizzle
Preheat oven to 400. Line baking pan with tin foil and put cooling rack on top. Prepare bread crumbs in one bowl and eggs in another. Dip cut pieces of chicken into bread crumbs and then eggs and then back into bread crumbs. Put coated chicken onto rack and drizzle with rosemary olive oil. Bake for 15 – 20 minutes depending on size of chicken pieces. Drizzle with olive oil again prior to serving.
