Mexican Rice Salad

Ingredients 

3 Tablespoons Lime Juice

2 teaspoons Chiptole hot sauce or Chili Lime Sauce

2 teaspoons agave or honey 

1/2 teaspoons salt 

1/4 cup olive oil 

1.5 cups rice 

1 cup chopped romaine lettuce or Spring mix 

3 chopped scallions 

1 cup chopped cherry tomatoes

1/2 cup crumbled queso fresco (mexican cheese)

1/4 cup toasted pepitas 

Directions: 

whisk together lime juice, Chile sauce, honey and salt. Whisk in olive oil. Add 1.5 cups rice to the dressing mixture and toss, adding salad greens, cheese and pepitas.
