Orange Roasted Beets

Ingredients:

red beets 

Mandarin orange balsamic vinegar 

Blood orange olive oil 

Salt and pepper (optional)

Directions:

Preheat oven to 425F. 

Coat beets with olive oil, salt and pepper. Wrap beets in aluminum foil and place on a baking sheet. Cook 45 minutes or until tender. Let cool, peel skin off and slice as desired. Toss with mandarin orange balsamic vinegar. Serve over a salad or as a side with dinner. 

Or 

Peel beets and cut into cubes. Toss with olive oil, salt and pepper. Place beets on a baking sheet and cook until tender. Toss with Mandarin Orange Balsamic Vinegar.
