Roasted Grape Tomatoes

Ingredients: 

Grape tomatoes - 1 or 2 containers depending on how much you use them 

Minced Garlic cloves

Salt and Pepper

Chopped fresh basil 

Arbequina Extra Virgin Olive Oil 

Directions: 

Put tomatoes in your dish or pan with olive oil and spices and roast for at least 20 minutes. You want the tomatoes to at least pop and shrivel a little. They are delicious served as a side or over chicken or fish, served on a bagel with cream cheese, in pasta or in a recipe that calls for tomatoes like black bean soup or dip. 

You can also serve them cold with a antipasti platter.
