Sheet Pan Pizza dough

4 cups All purpose flour 

1 Tablespoon Sugar 

2 tsp Kosher salt 

1 1/4 tsp Active dry yeast 

1 1/2 cups Hot water 

1/3 cup plus 2 Tablespoons extra virgin olive oil 


Combine the flour, sugar, salt and yeast in a stand mixer fitted with the dough hook. Combine the hot water and 2 Tablespoons olive oil then add to the mixer on low speed until a loose ball forms. 

  • Step 2: Knead the dough with the mixer on high speed until it is smooth and slightly tacky - about 7 minutes. 
  • Step 3: We lined our baking sheet with parchment paper first but we don't know if you have to - the original recipe didn't say to. Pour the remaining 1/3 cup olive oil into a 11 x 17 inch rimmed baking sheet. We purchased ours from the restaurant store for under $5 and love it. Transfer the ball of dough to the pan, turning to coat with oil. Cover loosely with plastic wrap and let it rise in a warm place until dough covers 2/3 of the pan. This takes about 1.5 - 2 hours. 
  • Step 4: Slide your hands under the dough and stretch it to fill the pan.  It doesn't matter if it fits exactly. Cover it loosely with plastic wrap and let it rise 30 - 45 minutes before topping it and baking it. 


By Hand: 

*If you wan to do this by hand: combine the dry ingredients in a large bowl, make a well in the center and add the water and oil, stir to combine with a wooden spoon. 

Step 2: Bring the dough together in a ball and knead it out on a smooth, clean surface. You might need to dust the surface and your hands with flour. Knead dough about 5 minutes until smooth and a ball forms.
