The sausage is optional. This recipe can also be made vegetarian, adding more vegetables.
- 3 Carrots - sliced in rounds
- 1/2 Red onion
- 2 peppers (red, yellow or green)
- Chicken and Kale sausage or your favorite!
- lentils - green
- 1 1/2 cups tomato sauce
- salt and pepper
Heat oil in pan and add sausage until it starts to brown.
Meanwhile, cook lentils according to your package. We use dried lentils and they cook fairly fast.
Add the onions and peppers to the sausage pan and cook them down. Add the carrots and sauce to the pan and cook until the carrots are done. I moved my oven - proof pan to cook with foil over it until the carrots were done.
Stir in the lentils or top your tomato mixture over your lentils.
You can serve this with pita bread too.
