Avocado Dressing

1/2 avocado, diced 

2 tablespoons chopped fresh basil leaves

1 tablespoon finely chopped fresh tarragon leaves

1 small garlic clove, finely chopped 

1 tablespoon Jalapeno Garlic Olive Oil from Olive Oil Etcetera 

1 1/2 teaspoons fresh fresh lemon juice 

1/8 teaspoon anchovy paste 

1/8 teaspoon kosher salt 

1/8 teaspoon freshly ground black pepper 

Combine all of the ingredients in a food processor. Add 2 Tablespoons of water and process until smooth. Cover the dressing and let it stand for at least 15 minutes or up to an hour to let flavors blend.
