Chewy Peanut Butter Granola Bars

print this page

I double this recipe!

1 Cup Old Fashioned rolled oats

2/3 cup crispy brown rice cereal or rice crispy cereal

1/3 cup flax meal

1/3 cup bittersweet or semi - sweet chocolate chips - I use the mini milk chocolate ones from Aldi so use whatever you want and I toss more in that 1/3 cup

1/3 cup dried cranberries - I don't measure so I think I go a little over. It tastes so good with the chocolate

1/4 cup brown rice syrup - I got mine on Amazon

1 Tablespoon Maple Syrup - Tybuk for us since we sell it and it's from PA

1 Tablespoon Blood Orange Olive Oil but you can use Coconut oil, canola or even try Butter olive oil

1 Tablespoon Water

1/4 cup Natural Peanut Butter - Creamy

Directions:

Preheat oven to 350 F

Line a 8x8 or 13x9 (if 2x recipe) with parchment paper so it drapes over the sides.

In a medium bowl, mix oats, cereal, flax, chocolate chips and dried cranberries.

In a small bowl, stir rice syrup, maple syrup, oil, water, PB.

Stir wet mixture into dry mixture & mix together. Dump and evenly spread mixture into the lined baking pan. Bake until your house smells amazing and the top is golden brown and darker brown around the edges. I like my ends crispy like when brownies start to crisp. Bake about 30 - 35 minutes.

Let cool about 30 minutes before cutting.
