Lemon Garlic Hummus

  • 1 (15 oz) can of Chickpeas or Cannellini beans  (save some juice) 
  • 2 Garlic cloves - minced raw or quickly cooked on the stove with some oil to change the flavor
  • 1 Fresh lemon (squeezed) and zest of the lemon 
  • Arbequina extra virgin olive oil or your favorite flavored olive oil 
  • Tahini (sesame paste) - 2 Table Spoons
  • 1/4 tsp salt - add to taste 
  • 1 tsp ground cumin (optional) - cumin is strong and smokey 
  • Paprika or everything spice to top hummus/also add lemon zest to the top of the hummus 


Drain and rinse beans, reserving about 1/4 cup juice.  Place beans in food processor with garlic, lemon juice and reserved reserved bean liquid. Process until smooth - add tahini and olive oil to desired texture.

Add Salt and cumin (optional) to taste. Blend until smooth.  Top hummus with Everything Spice and/or paprika. Serve with Naan, corn tortillas or a side with chicken or vegetables. Add your hummus to a salad for a creamy  texture.
