Oatmeal Bars

Ingredients:

1 cup whole wheat flour 

1/2 cup rolled oats (old fashioned)

1/2 cup firmly packed brown sugar 

1/2 tsp baking powder 

1/4 tsp salt 

6 Tablespoons unsalted butter, room temp and cut into slices so you can mash it into a dough with fingers or masher. 

1/2 cup finely chopped walnuts - optional 

3/4 cup blueberry jam or desired jam (I used Wild Maine Blueberry Jam from Stonewall Kitchen)

Directions: 

Preheat oven to 350 F. Line an 8x8 inch baking pan with parchment paper. 

In a large bowl, add flour, oats, brown sugar, baking powder and salt. Stir with a fork to combine. Add the softened butter and combine until ingredients are a crumble mixture. Add the optional nuts. 

Divide the dough into three in your bowl and use 2/3 for the bottom layer of the crust. Press it into the pan with your hands or a spoon. Add the jam and then the last of the dough mixture. This is going to be so yummy. 

Bake about 45 minutes or until brown around the edges. 

let it cool about 30 minutes.
