Pink Frosted Sugar Cookies
Ingredients:
- 1/2 cup Butter olive oil from Olive Oil Etcetera
- 1 cup vanilla yogurt
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp pure vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
Cream cheese frosting ingredients:
- 8 oz light cream cheese
- 4 cups powdered sugar
- 1 1/2 tsp pure vanilla extract
- 1/2 tsp butter extract
- 1/2 tsp salt
Prep:

Preheat oven to 375F. Coat cookie sheets with olive oil cooking spray or parchment paper.

In large mixing bowl, add olive oil, yogurt, sugar, egg, and vanilla and butter extract.

Mix on medium speed for 2 minutes or until smooth and creamy.

Add flour, baking soda and salt. Mix on low speed until completely combined (dough should be a little sticky).

Roll out onto floured surface until dough is 1/4 inch thick.

Cut into desired shape and place on prepared cookie sheet

Bake 10 - 12 minutes. Let cool and frost with cream cheese frosting. Top with sprinkles.
Directions for cream cheese frosting:
In a mixer bowl add cream cheese and beat on med/high speed until smooth.
Add powdered sugar, vanilla and butter extract and salt. Blend until smooth and creamy.
