Pink Frosted Sugar Cookies

  • 1/2 cup Butter olive oil from Olive Oil Etcetera
  • 1 cup vanilla yogurt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt

 Cream cheese frosting ingredients:

  • 8 oz light cream cheese
  • 4 cups powdered sugar
  • 1 1/2 tsp pure vanilla extract
  • 1/2 tsp butter extract
  • 1/2 tsp salt


  • Preheat oven to 375F. Coat cookie sheets with olive oil cooking spray or parchment paper.

  • In large mixing bowl, add olive oil, yogurt, sugar, egg, and vanilla and butter extract.

  • Mix on medium speed for 2 minutes or until smooth and creamy.

  • Add flour, baking soda and salt. Mix on low speed until completely combined (dough should be a little sticky).

  • Roll out onto floured surface until dough is 1/4 inch thick.

  • Cut into desired shape and place on prepared cookie sheet

  • Bake 10 - 12 minutes. Let cool and frost with cream cheese frosting. Top with sprinkles.


 Directions for cream cheese frosting:

In a mixer bowl add cream cheese and beat on med/high speed until smooth.
Add powdered sugar, vanilla and butter extract and salt. Blend until smooth and creamy.
