Red Pepper and Balsamic Crostini
2-3 roasted red peppers (Pre-made or home-made)
Roasted Garlic or minced fresh garlic
1-2 ripe tomato, chopped
1 cup chopped basil and tarragon (amount varies based on taste)
1 red onion, chopped
Fresh lemon, squeezed and lemon zest
Salt and pepper to taste
Parmesan cheese - grated on top of finished
Preheat oven to 350 F. Arrange baguette slices on large baking sheet. Generously coating each with olive oil (Garlic Herb infused recommended). Bake about 15 minutes, checking it to make sure it is not burning, just browning.
In a medium bowl, mix together roasted peppers, olive oil, balsamic vinegar, garlic, tomato, tarragon/basil, onion, salt and pepper.
