Spinach and Pomegranate Salad

Pomegranate Spinach Salad Pomegranate arils

Prep time: 20 minutes Makes: 4 Servings 


10 oz spinach leaves (rinsed and drained) 

1/4 red onion (sliced very thin)

1/2 cup walnut pieces or slivered almonds

1/2 cup feta cheese crumbles 

3/4 cup Pomegranate Arils 

4 tablespoons Raspberry Balsamic Vinegar or Pomegranate Balsamic Vinegar from Olive Oil Etcetera 

1/4 cup Fruity Extra Virgin Olive Oil or Koroneiki Extra Virgin Olive Oil from Olive Oil Etcetera 

Salt and Pepper (optional)


Place spinach in a salad bowl. Top with red onion, walnuts, and feta. Sprinkle pomegranate seeds over the top, and drizzle with mixed oil and vinegar.
