Strawberry Banana Bread

Ingredients:
1 cup Brown Sugar
2 Large eggs
1/2 cup Blood Orange Olive Oil from Olive Oil Etcetera
1 1/2 tsp pure vanilla extract
2 medium ripe bananas, mashed
2 strawberries - sliced
1/2 cup yogurt (plain or vanilla)
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 cup chia seeds
A handful of shredded unsweetened coconut
1 lemon - juiced
Powdered sugar
Directions:
1. Preheat oven to 350 F.
Generously coat one large loaf baking pans with Coconut oil or olive oil
2. In a mixer bowl, add brown sugar, egg, olive oil, and vanilla. Beat on medium speed for 2 minutes or by hand.
3. Add bananas and yogurt. Blend for another minute.
4. Add flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Blend until smooth. Pour into prepared loaf pans.
Meanwhile, make the lemon glaze 1/2 cup powdered sugar and 1 fresh squeezed lemon. Add more powdered sugar if desired or lemon juice.
5. Bake 45 - 55 minutes or until a knife is inserted and comes out clean.
